4 slices 12-grain bread
2 cups grated Beemster Medium
4 slices tomato
½ cup baby spinach
2 tablespoons butter
1Arrange ½ cup grated Beemster Medium on one bread slice.
2Top with 2 slices tomato, ¼ cup spinach, and an additional ½ cup Beemster Medium. Place bread slice on top and press firmly.
3Repeat with remaining ingredients.
4Melt butter in large skillet over medium heat.
5Add sandwiches and cook, covered, 8 minutes until golden brown and Cheese is melted, turning once.
